One-Pot Ninja Foodi Meatloaf and Potatoes Recipe

Ingredients

Meatloaf

  • 2 pounds ground beef
  • 2 eggs, beaten
  • 2 cups old-fashioned oats (or gluten-free oats)
  • 1/2 cup evaporated milk
  • 1/2 cup chopped onion
  • 1/2 tsp garlic salt

Potatoes

  • 3 pounds russet or yellow potatoes, peeled and quartered

  • 1 cup cream (1/2 and 1/2)
  • 1/4 cup sour cream
  • 4 tbsp unsalted butter
  • 1 tsp garlic salt

Corn

  • 12 oz frozen corn
  • 1 tbsp unsalted butter

Sauce

  • 1 cup ketchup
  • 3/4 cup brown sugar, packed
  • 1/4 cup chopped onion
  • 1/2 tsp liquid smoke
  • 1/4 tsp garlic powder

Instructions

  1. Prepare the Meatloaf:
    • Mix all meatloaf ingredients in a large bowl.
    • Shape the mixture into a loaf and place it on a sheet of foil sprayed with non-stick cooking spray.
  2. Cook the Potatoes:
    • Add 1 cup of water to the Ninja Foodi and place the quartered potatoes at the bottom.
    • Insert the rack and place the meatloaf on top.
