- To make the ice cream mixture, take a small saucepan and blend the corn syrup, heavy cream, milk, and sugar. Whisk it continuously while cooking it on medium heat. Make sure the milk mixture doesn’t burn. Cook until the mixture starts to look slightly bubbly.
- Whisk the eggs: Whisk the eggs in a separate bowl. Gradually pour small portions of the hot milk mixture into the eggs, one tablespoon at a time, and whisk continually.
- Cook on low heat: After adding the milk mixture to the eggs, blend the milk and egg mixture back into the saucepan. Then cook on low heat for almost 5 minutes or until it reaches 165° Fahrenheit. The mixture will thicken a little, simply enough to cover the spoon. Remove from the heat.
- Add ingredients: Pumpkin pie spice extract, pumpkin spice, pumpkin puree, and nutmeg. Then blend it.
- Freeze it: Before freezing, allow the ice cream base to cool. Add into an empty Ninja Creami pint canister and freeze for 24 hours.
- Process on Gelato: Remove the pint container from the freezer after 24 hours. Position the pint canister inside the outer bowl of the Ninja Creami. So, continue with “Gelato.”
