Ingredients

  • 1/4 cup Corn Syrup
  • 4 Egg yolks
  • 1 cup Heavy cream
  • 1/2 cup Sugar
  • 1/2 cup Milk
  • 1 teaspoon Almond extract
  • 1 cup Black cherries

In this recipe, I have used light corn syrup. It is never recommended to use dark corn syrup as it can change the flavor a lot. You can use honey or agave nectar as a substitute for light corn syrup. Large eggs are used in this recipe.

The yolk of 4 large eggs is equal to ¼ cup of egg yolks. I have used granulated sugar in this recipe, but you can also use a sugar substitute that you prefer.

If you don’t like heavy cream, then you can go with a combination of milk and butter, but make sure that it is mixed thoroughly.

In this recipe, I have used almond extract, but you can also use vanilla extract, which is believed to be a good alternative. Almond extract has a more robust flavor than vanilla extract. You can use frozen or fresh cherries in this recipe.

Jarred maraschino cherries can also be used, but keep in mind that they have a sweeter taste. I won’t use canned cherry pie filling for this recipe.

How to Make Ninja Creami Cherry Gelato

1. Combine Ingredients: Take a small saucepan and combine heavy cream, milk, corn syrup, and sugar in it. Cook on medium heat while continuously stirring. Please don’t boil the mixture.

2. Temper the Eggs: Take another bowl and whisk the eggs in it. Temper the eggs by pouring a small amount of the hot milk mixture into the eggs. Pour a couple of tablespoons at a time and whisk continuously.

3. Cook Mixture: Once the milk mixture has been added to the eggs, pour the milk and egg mixture back into the pan and cook on low heat until about 165°F. The mixture should start getting thick. Please remove it from heat.

4. Add Flavor: Add almond extract and stir. Allow the ice cream base to cool before freezing.

5. Freeze: Pour the mixture into the empty Ninja Creami pint container, freeze for 24 hours, and then remove the pint from the freezer.

6. Process: Place the pint container into the outer bowl of the Ninja Creami and process on Gelato.

7. Add Cherries: Dig a well down the center of the ice cream, pour cherries, and process the mix-ins.

8. Enjoy: Remove the pint from the container and enjoy.
